How do you use left over food?

It's dinner time  and you've cooked a little more then was needed...there's still some mashed potatoes in the pan, a few pieces of chicken and a cup of corn what do you do with it? There's not enough to serve a second time as a whole meal. Give us some of the ways that you still use whats leftover.

Eat it for lunch :) I adore dinner leftovers for lunch.

I second this!

Or, just the chicken & corn for lunch, and make potato pancakes for the next night.

Mashed potatoes + eggs & seasoning fried in a little bit of oil or fat. MMMmmm...

LOL...when I wrote the post I was thinking about potatoe pancakes too add a egg some onions or peppers fry them up and your good to go!

Most of our leftovers are veggies or perhaps a pc of lean meat/fish. I cook very little starches in general... those are hard left-overs to re-use !

If I have extra I can use it by the end of the week by making stir-fry on Fridays. Most any veggie can be added to stirfry and most animal protiens as well.

That's a good idea! My aunt use to make leftover stew with all her veggies.

Add some soup stock & water, to make potato soup, & cut up the chicken & throw the corn in :D

Probably add more potatoes too

lol...yeah maybe add a few more veggies top it with the potaoes toss it in the oven until they are browned...
