I've been on a Chile Relleno kick recently and have been going around to a bunch of mexican restaurants in Des Moines (we have a lot of them) and trying them. I've found that they're rather different from place to place!

The first one that I tried, and the one I liked the most, was from El Aguila Real. Just a pepper slit open and stuffed with a mixture of seasoned ground beef and cheese sauce, then covered in shredded cheese and baked.

I've also tried one that's a pepper stuffed with some cheese and meat and wrapped in a tortilla and, like, steamed or something? Maybe baked but in some kind of wrapping? Also one that was just a pepper filled with cheese and wrapped in egg, like a thin omelette, and then that was all covered in sauce and cheese.
