How does the GF crust hold up? Is it something that I can use in other blind bake pies or quiches?

It held up well, though none of the filling ingredients were REALLY wet.

It IS a little on the sweet side, so you'd have to adjust that a bit. But I think it would do OK.

Not at all, but not terribly crisp, either. You might swap out all or part of the potato starch for tapioca and see what that does if you're looking for crisp and flaky.
