Is "hate management" a lost concept now, or am I just getting increasingly crappier parties lately?
Also, is it morally right for a PLD to let a NIN tank instead, in the same party, while the PLD sits and just auto-attacks? :/ I mean, I know they tend to take a back seat to ninjas at later levels, but this is still pre-50...

If you have any idea how parties should be built, the generally involve one tank, 2 DDs (one to open and one to close a level 2-3 skillchain, and hopefully one of those DDs can pull), a healer (whm, smn, or rdm/whm), support (rd,, brd, cor), and someone to land Magic Bursts on skillchains.
Most jobs can fulfill one or two of those roles, but tanks tend to be pretty specialized. This 'old-school' setup more or less falls apart in the mid-50s thanks to ToAU.

And good, so it's not just me finding these parties worsening. I know I haven't been around the game much(I think I've been since January), but even I can see this weird thing going on where it's blatantly obvious people didn't learn their job in Valkurm Dooms.
I've been blessed with a few good parties at least (particularly the 43-47 stretch of my levels), but on the opposite end of the spectrum I seem to find myself in parties that still seem to be learning their jobs the rest of the time. Considering they've had between 47 and 49 levels to figure it out at this point(37-39 if you ignore the first ten levels of soloing), it's a pretty grim foreshadowing of what the endgame will be like soon.
