Blueberry Pound Cake with Lemon Glaze
Cake:
1/2 pound butter (2 sticks)
11/2 cups sugar
3 eggs
3 cups flour
11/2 teaspoons baking soda
1/2 teaspoons salt
1 cup yogurt
1 pint blueberries
juice and grated zest of 2 lemons
Glaze:
2 cups confectioners sugar
1/4 cup lemon juice
Heat oven to 350. Cream butter and sugar in an electric mixer at high speed until
light and fluffy. Add eggs one at a time, stopping the mixer and scraping the bowl occasionally.
In another bowl, sift together the dry ingredients. Mix blueberries with the dry
ingredients. Stir yogurt into mixing bowl. Stir dry ingredients and blueberries into mixing
bowl, just enough to incorporate. Stir in lemon juice and zest. Put in greased and floured
Bundt pan. Bake for one hour or until a toothpick comes out clean. Mix glaze ingredients
and pour over cake before serving.
