The one for 5.14 was the first one I wrote and might be the best, though I confess to liking 5.10 a lot for some weird reason. (And yes. You see my author bias slipping in there in the 5.14 tag. You really do.)

I was really trying to do a whole evolution with this, and I'm glad that worked out! Sam and Castiel's relationship is one of the most interesting to me because of all the reasons you list, because he forces Castiel to confront his own biases and also is so...stubbornly faithful in something even when Castiel is floundering, and I have to think Castiel would find him at the very least fascinating.
You've hit the nail on the head with what I was going for with that ending. I may have peeled some of that idea out of "And This Great Blue World" incidentally, because omg, that fic.
