Aaargh, I turned my back for just a second and when I turned back there they were. Not one, not two, not three but four huge courgettes, the length of my arm from wrist to elbow and about as wide. I swear it was only a day or two since I last denuded the plants of their offering, I could have sworn there wasn't anything left to turn into even a small courgette for a day or so. But no, the little blighters must have been hiding.
Anyway, I'm not really complaining, I'm loving growing my own produce. But if anyone has any good recipes I'd be glad to hear them. So far I've done:
- that courgette and tomato thing with onions and garlic that everyone does to use up the courgette glut. My mother used to call it ratatouille but then I had proper ratatouille and realised this was a travesty
- courgette and cheese loaf
- grated courgette salad
- raw as crudites or in salad
- steamed / boiled as a side vegetable (I actually prefer them this way to fried)
- stir fried in my take on a fried rice and chicken dish (also included cabbage and chard from the garden)
- and also, much to my friend J's horror, sliced on top of toast and marmite for breakfast
Any other suggestions??
