Poor LJ

I'm using and abusing my LJ - I'm only here because I want something. I'll get around to updating properly when I can. In the meantime, I need a tried and tested recipe for ginger bread men that doesn't include molasses or any other weird ingredients. If you can help, post a recipe here. Cheers!

If Wrai finds you a source, do try a molasses-y recipe (let me know and I'll send you my favourite) as it is lovely and dark tasting.

Thank you! I should have known I could rely on you for a recipe, being a mum and all. ^___^ I think it worked the way it was meant to, but the biscuit texture was pretty crisp. So I baked them less and same story, I think that's just how they are without molasses or golden syrup.

Substitutes for molasses (in case you would rather use a tried and true recipe)
Cane molasses is a common ingredient in baking, often used in baked goods such as gingerbread cookies. There are a number of substitions that can be made for molasses; for a cup of molasses the following may be used (with varying degrees of success): 1 cup honey, or ¾ cup firmly packed brown sugar, or 1 cup dark corn syrup, or 1 cup pure maple syrup.

I saw that, when I first started looking up recipes on the net and seeing molasses everywhere and not knowing what it was, wiki was the first place I turned. I didn't like the sound of "with varying degrees of success" tho, sounds a bit fishy!

I agree, but often good brown sugar gives the same soft texture and 'brown' taste that molasses contributes so it might be worth a try. Glad that the recipe was a help - now that I sort of have a kitchen again I should give it a try (did you include the crystallized ginger 'freckles' or leave it out?)

Thanks again for the recipe. For what it's worth, my mum thought they were good. I left the crystallized ginger out because we didn't have any.
