A bit SW of Hobart is the skywalk, which is kinda cool, although it does help to be taller. The rails are a bit high. If you can drive around the place, the East coast is much prettier than the west of the island.
Where is your conference? Hobart or Launceston? There's a lot of cool places around, depends on what you are wanting to do. http://www.discovertasmania.com/ has a whole heap of info on places to go. Cradle mountain is good for hiking/scenery, it's roughly in the north/centre of the island. If you're in Hobart go to the salamanca market, lots of awesome random trinkets and fooooood.... omg so much nice fresh food over there. Freycinet National Park on the east coast is quite nice, you can do canoing or hiking etc.
The Cadbury Factory in Claremont (Hobart) used to do tours of the factory and you can buy chocies there for like 1/2 price.
Doesn't really matter where you are there is heaps to do and lots of beautiful scenery.
I heard about your mother's protest against Mt. Kinabalu. My mother tried to pacify her fears. She asked my mom if she would let me and my mom was like "yeah why not?" Apparently my mom is oblivious to the 'dangers'.
I do agree with you. Don't quite understand what the shock horrors are against climbing the mountain. It's not like it hasn't been done before.
Mom related to me though that if we had told her half the stuff we attempted to do in NZ before attempting it, there probably would've been a protest. But we would've done it anyway. So, I guess, just do it anyway?
