1 cup vinegar (I use half-half cider vinegar and half white wine vinegar**)
1 cup granulated sugar
1 teaspoon whole black peppercorns
1.5 teaspoon whole mustard seeds
¼ teaspoon salt
(1) 2.5” cinnamon stick
Stir together all ingredients but grapes. Bring to just boiling. Place grapes in a large bowl and pour brine over the top to cool. When grapes are cool, transfer to appropriately sized Ball jars, cover, and refrigerate at least overnight. Recipe increases easily. Best eaten within two days-grapes shrivel and fade after that. Serve in salad or as a side.
* Original recipe calls for red globe grapes. I use whatever is appealing/available/on sale at any given time. The crisper the grape, the better, although I have brined older grapes.
** Original recipe calls for white wine vinegar. After accidentally running short of white wine vinegar and having to augment it with cider, taste testers came down unanimously for the combination of the two vinegars.
