When you have a little girl that consistenly wakes up between 5:00 and 5:30 AM, you can get a lot done in the morning.
For instance, today I baked two loaves of bread.
From scratch.
That were yeast risen.

OK, they only required a 30 minute rise, but still.


5 C. flour (I used King Arthur White Whole Wheat, but unbleached white or regular whole wheat works)
4 tsp. sugar
2 tsp salt
1/4 tsp baking soda
2 packages yeast

2 c. milk
1/2 c water

grease and powder with cornmeal two 8" loaf pans
combine 1 and 1/2 c flour with the sugar salt soda and yeast in your mixing bowl
heat milk and water to 120 F, add to the mixing bowl
stir to combine, then add the rest of the flour, mix until well combined
split between the pans, and then set, covered, in a warm place for 30 minutes

brush milk on the tops,
Pop them in a 400 degree oven for 25 minutes

Let cool, slice and toast

Voila, like english muffins (a little fewer nooks and crannies, but similar taste) but in loaf form.
You could theoretically roll this out and cook on the griddle like english muffins are supposed to be, but why would you?
