Hurricane Ike in Upstate NY

So on Sunday Night / Monday morning we got hit by the remnants of Hurricane Ike, with up to 60 MPH winds. I don't think we got nearly that much, but parts of Upstate NY had serious power outages, enough to close schools

I've seen recipes for things other than pie to do with underripe apples, but I can't quite remember what. Of course, if you put them in a refrigerated truck and pipe in CO2, they'll be just like store-bought.
