It is, isn't it? I had soup again for lunch. :9 I think I'll make an even bigger pot of soup tomorrow so then I can have it for the rest of the week! *brilliant plan*
Autumn is my favourite season! But it doesn't last nearly long enough! \o\ (My dad is...idk -- he didn't even want to come out hiking. XD But then he ran up the mountain, all excited. One time, when we were in Florida during a hurricane, he was all like, "Let's go swimming in the ocean. :D :D")
I cook for just myself and I'm usually super lazy, so my only criteria for my ~home-cooked meals are: 1) easy to make (e.g. if it takes fancy equipment and/or ingredients, then I ain't making it), and 2) healthy. What I do is this: 1) boil the veggies (carrots, onion, zucchini, pumpkin, whatever) and potatoes (or yams or sweet potatoes), 2) add salt and chicken bouillon, 3) take the boiled and softened veggies & etc out of the pot and put into blender with some milk, 4) blend (or, as proper recipes would say, "~puree"), 5) put back into pot along with some chewy bits (bits of mushrooms, diced onion, zucchini), 6) boil some more, 7) PROFIT.
Cutting up all the veggies takes some time, but it's all super easy to do! If you're less lazy than me, you can saute the onions a bit first before adding them to the soup. Actually, you can saute whatever the heck you want before boiling. XD The flavours are stronger that way, I find -- but, again, TOO LAZY \o\
I love the photos, especially the one with red leaves on a tree. Gorgeous. And your post makes we want to go hiking before it gets too cold! It's kind of refreshing, even if it is hard work to climb up trails!
