Yesterday we were travelling around the country and so eating out. We had Thai in the evening which was delicious and pretty healthy stuff. I focused on the lean meat dishes (Drunken Tiger - yum), passed on the deep fried sesame toast, and didn't stuff myself just because the food was there. Also I resisted the wine, and didn't have pud. Go me.
Tonight I'm cooking roast chicken with veggies. This week I'm planning to get out walking in my lunch hour if it isn't throwing it down with rain.
I love Thai. It has the best flavours! And you were brilliant, so go you!
Better again today, but I'm still playing it safe. I'll try some walking Wednesday.
When you're doing roast chook, try this. Boil a couple of small lemons till they're soft, then prick them with forks then put them inside the chook and roast. The lemon essence goes the whole way through the meat, tenderising and gently flavouring everything. It's the best way to eat roast chook, I reckon! Also, if you like, you can season the outside with olive oil and lemon pepper seasoning.
