When I was in college (pretty damned long ago) they were just expanding into a large new property beyond the main building. Once the construction was in place they elected to plot the walkways by letting us do the work: which is to say, they didn't plot the walkways.
During the summer break they paved the trails we had walked into the lawn and underbrush. The resulting haphazard, not-remotely-gridlike walkways were rarely short-cutted in the following years I attended.
