I'm only eyeballing the Vita because it seems like that's the handheld that's gonna have a bunch of games on it, since the 3DS is kind of... eh. Also, Vita isn't region locked. Score.

FFVII was a great game. But, because it has been seen through nostalgia glasses for so long, gamers have come to regard it as the Second Coming. They have put it on a pedestal and worshiped it so much, no real game could possibly live up to those expectations.
A FFVII remake, as the real thing, would inevitably clash against the perfect idealized FFVII in people's minds. The remake could be an objectively great game, and gamers will still bash it for not being good enough.

There's a number of interested people who haven't played FFVII, but have heard about it from those who did. I've heard of some fans who've been exposed to VII via AC(C) or Crisis Core, and I'm not too surprised given it's been about 14 years since the original came out. While the oldbies are pretty noisy about how a remake would just bite the big one, I think there's a good market of new people out there who would think otherwise if one was released.
If S-E does remake FFVII it will (or it should) be at a time when the people who haven't played it definitely outnumber those who have.
Or when Nomura's done with Kingdom Hearts. I think he still wants to do more with that series first.
