one of the flatmates has just brought over a bagful of courgettes from her mother's garden so i'm excited to try this out tomorrow night! :D
(although, could it work with ricotta instead of cream? i've been using a lot of ricotta - with spinach and pasta - lately so i have some and i'm too lazy to buy one extra ingredient :p)

Oh, man, fresh courgettes! I am very, very jealous.

I think it could definitely work with ricotta, but I'd would have some milk or even just more water on hand to dilute if the sauce ends up being too stiff. Actually, now I want to try this with ricotta and see what the differences are. Let's discuss after we experiment!

ok, i've tried it two times with courgettes and both times i lost my patience after half an hour of waiting around the pan for the veggies to become mash-able! this is why i will never become a semi-good cook - my priority is always to feed myself, and less to make something look nice/coherent. so it was more chunky (ie: with bits of courgette) than mash, but i did enjoy it greatly! :D (although: i had no problem with the dryness, perhaps courgettes absorb less oil/water than squash? i also added some soy sauce which might be weird with courgette+ricotta, but i add soy sauce to everything savoury. true story.)
did you try it with ricotta et? :D

We made it! Well okay, I'm lazy... ironchefjoe made it last night. Om nom nom nom nom. He was all suspicious as to if it would be good, and we both had seconds! I ate the rest for lunch. Om nom nom.
