my brother bought me 4 pounds of yellow squash when i asked for 4 pounds of butternut. what can i do with this stuff that is easy, will keep for awhile and is yummy?

With four pounds I'd probably make a few things!

*You can stuff them, like zucchinis, and freeze.

*They are nice in mixed vegetable soups!

*They would work in a ratatouille or caponata if you have the other ingred's.

*slice them in rounds and fry in olive oil (with garlic and or onions if desired) as a side dish.

*you can also cool and marinate the above fried rounds in an herbed vinaigrette and serve cold/cool with salad.

ok, that recipe probably doesn't exactly qualify as "easy," but I don't think it would be too difficult either. Just several steps and ingredients involved, but probably pretty fool-proof, yk?

i talked my mom into taking some of it, then i'm gonna make this super easy squash casserole with some and with the leftovers i may do the frying idea, i love fried foods!

I don't have the recipe but my mom would batter it in flour and pan fry it...
so good!

also she would make squash casseroles with cheese...
