Adobo is just a blend of dry spices which can or not be spicy hot. It could have pepper or not, and it could have garlic or not..etc. Typically, the base is salt and the original adobo had cummin (? - the spice that gives red color out). In general though adobo is a particular type of seasoning it could just translate as "seasoning". Wet types of seasoning have other names.. in PR for example "sofrito" is a combination of unions, tomatoes, oregano, etc, to which you can also add adobo....

Hmm... Okay, this was chipotle peppers in adobo sauce! I guess I forgot to read the important part. That is what I get for watching "Mexico - One Plate at a Time" with only part of my brain =P
