I'm trying to cook as much as possible to take back with me for the week, as I've been eating out waaay too much, which costs a bundle and I don't even enjoy it.

Quinoa Salad



Sort of from a recipe, but then I just kept throwing everything in. Quinoa, chickpeas, peas, pineapple, cilantro, scallion, and a red wine vinegar dressing.

Baba Ganouj



There were too many eggplant in the garden, and I just couldn't let them go to waste. And wtf is this corningware storage mug I found?!

Peach Shortcake



Dessert last night. Fresh peaches, homemade sweet scones--the perfect dessert.

Made for dinner but not pictured: Broiled eggplant and homemade seitan over brown rice with a peanut satay sauce. Too delicious to pause and take pictures.

A post about actual life (although, food tends to be a large chunk of that in reality anyway :D ) coming soon.
