The recipe I use to make cinnamon cookies says that it needs one egg to bind it all, but I find that of I melt the butter a bit before I put it in that it does the same job of binding. It made the mix easier to handle too. I love making cookies, but the batter always seems to come out wetter than it's supposed to.
