I have zero suggestions for you since (a) I'm a pretty picky eater and (b) I can't cook. lol But I would DIE without chicken. I swear I eat it at least once a day, especially since I came to college. I have no idea why.

Haha...that's okay, I'm much the same.

I kind of miss the days when I did eat chicken and turkey because it was a really easy way to get my lean protein...oh, well.

Try some of the Indian vegetarian stuff and fish dishes.

Rogan Josh can be made without meat and is very subtle.

I'm a meat eater (indeed carnivore) but will happily eat a lot of Indian vegetarian dishes.

I will look into that one. I'm a little bit iffy on Indian food because I'm not crazy about the spices.

But I have had some decent dishes here and there :)

I have some ideas! My mom makes a fantastic salmon - she cuts up some dill, puts it on the raw salmon, wraps it in foil, and grills it. Mmm. Also, try www.tastespotting.com - visual inspiration!

Oh, I love Salmon; I definitely want to get into making more fresh fish at home. I usually eat it when I'm out or in some frozen form, but it's soooo good fresh.
