I think the costume´s designer was Eiko Ishioka. She normally works as an art directorfor films, but when Coppola asked her about making the costumes and explained her he just wanted to overturn the importance of symbols on the costumes she could just say yes.

Ooh thanks for letting me know! I just googled her and looks like she's doing the costumes in an upcoming Snow White film - definitely one to look out for :)
