From the ISASC Museum:  Troemner Cream Testing Scale
This scale is listed in the 1926 Troemner "Catalogue of Scales and Weights For Grocers, Confectioners, Bakers and General Market Uses" as
“The most satisfactory 1-bottle cream testing Balance.” One hanger is designed to accommodate a single glass vial for the cream being tested
and the other hanger with a pan to hold the 9 or 18 gram weights supplied with the scale.
The scale was made by the Henry Troemner Company, Philadelphia. Henry Troemner immigrated to the United States from Germany in the mid-1830s
and established his own scale company sometime around 1844. Although the company made many types of scales, Henry is especially known for
the balances he was commissioned to make for the United States Mint in Philadelphia and later the San Francisco Mint.
This scale was manufactured to accept a single Babcock cream test bottle. In 1890, Stephen Moulton Babcock developed the first inexpensive
and practical test to measure the butterfat content of milk. This test prevented less-than-honest farmers who could, prior to this, water down their milk
or remove some of the fat content before selling it, since milk was sold by volume.
