1. Jello - I don't know about over there, but here there's a brand that does a quick set jelly which gets its quick set from having vegetable gum rather than gelatine.

3. I believe the US vege-based margarine used as a butter substitute is http://www.earthbalancenatural.com/

4. Substituting eggs is all about their purpose. For liquid, for binding, for rising. Apple sauce for liquid, mashed banana for binding, flax seeds for rising, are easy basic substitutes. This is my favourite part of vegan cooking, substituting eggs - it reinforces that cooking is not about eating the same foods the same way you always have, but is about chemistry and science.

Also just in case you're not aware, if soy is not a problem, you can get soy equivalents of everything dairy - milk, cream, cheese, cream cheese, condensed milk, etc etc etc.

Hmm. Any particular kinds of food? I am trying to remember things we made for Thanksgiving when my sister was vegan. Mostly roasted vegetables of various types, I think. We'd stuff mushrooms with bread crumbs, garlic, olive oil, herbs, but no butter or cheese or anything. Um. We made lasagna rolls with a pine nut spread which were really yummy (http://veganyumyum.com/2009/01/eggplant-and-pine-nut-rolled-lasagna/).

(We did make a pie crust with Earth Balance instead of butter, and it was. Not butter pie crust, but also not bad? I also have decent cookie & cupcake recipes, which, again, obviously butter makes everything better but they are not bad.)

Honey, as you know, my vegan cooking knowledge extends to microwaved potatos and brussel sprouts. And we don't have Trader Joes in Australia! I'm dying here!

I presume this is over and you got all the advice you needed, but LMK if you need more--I do a lot of vegan cooking. And bacon based cooking. A woman needs balance.
