I have one that I gleefully swiped (with a few small changes) from local chef Dana Cree via the blog she occasionally contributes to at tastingmenu.com. It's a lot of work for pancakes, but it's amazingly worth it. This makes about 9-10 pancakes of the size (1/3 to 1/2 cup) that I prefer

Here's an update. After a few variations on my first one above, I've settled on this as a new favorite. I've taken some shortcuts with the procedure to save time and dishes and honestly can't tell the difference. The texture is almost exactly like IHOP's (tender, yet just a little bit of spring to them) and the taste is *perfect
