Excellent idea! I like your ingenuity. But I think could go one step further. One of the things that make smores so good (and messy) is the hot marshmallow melting the chocolate. So if you're replacing the hot marshmallow with cold marshmallow creme/fluff, you'll want to devise a way to get melted/runny chocolate so it's not just a hard chunk. See if you can find a milk chocolate spread near the peanut butter at your local grocery store. Then just split a graham cracker plank in half, dallop on a spoonful of chocolate on one half and a spoonful of marshmallow creme/fluff on the other, and sandwich them together.
Another alternative would be to use normal ingredients and use a microwave to make normal smores at the con. (Most hotels will rent them to you for a small daily fee.)
Nutella might work, though you'll definitely be able to taste the hazelnut. It'd would taste good, but wouldn't really taste as much like a smore. See if you can find just a plain chocolate spread first.
