I have been eating a lot more calorie-dense foods during the past week or so.
I think that this is because of my basement makeover experiment. It was a much more intense workout than I realized. I was just so happy doing it that I forgot about how strenuous it was to carry things up and down the stairs for 8+ hours a day for three days nearly straight, while pregnant.
Since then, I’ve been quite sore and waking up in the middle of the night for an extra meal.
I’m starting to get a little bit concerned about my diet, because I have the glucose tolerance test on Thursday. Not every meal here is low glycemic. I better eat a glycemic balanced diet the next few days. Thursday, I can’t eat any carbohydrates til I drink the sugar drink around 1pm.
Tempeh burger, apples, and fries. The guys had turkey burgers. I couldn’t manage to eat the tempeh, though. I ate a lot of fries, so high glycemic.
Blueberry muffins, because I was having a craving. I have been a bit sick, so this was comfort food for my full dinner and also midnight snack. My usual is whole wheat, but these are white flour muffins. High glycemic.
A classic lunch for me. It’s a potato with other vegetables, olive oil, salt and pepper. It’s so easy to pack and takes about 7 minutes to microwave properly. I used to bring frozen cups of homemade beans to add to it. I think potatoes are high glycemic no matter what.
Ezekiel cereal, almond milk, and blueberries. So the blueberries we bought this time were absolutely exquisite. This is how I like cereal, with lots of fruit in it. Low glycemic.
This is a frozen Amy’s burrito, which is a total luxury item to me. I rarely buy a frozen pre-prepared food unless it’s a vegan meat that I can’t make myself. But it was delicious, and of course I added a ton of veggies. The burritos were two for the price of one, and I essentially ate two within an hour or so. The cilantro is from our garden. Low glycemic.
How do you like your peanut butter and jelly? I have been needing a lot more calories to make up for all of the physical labor that I did over the weekend. This is natural no sugar peanut butter and vegan butter on Ezekiel toast, topped with berries instead of jelly. Low glycemic.
“Sunflowers” Butternut squash pies. I made an extra large one too and froze it for later. Probably high glycemic, but maybe not, it does have a lot of vegetable and cinnamon in it.
This is a cherry protein smoothie. Ingredients: frozen cherries, protein powder, nut milk, decaf green tea. I think this is low glycemic, but it can be drank really fast, so who knows.
Tofu stir fry, made with miso powder. Low glycemic.
Green smoothie: kale, mango, nut milk. It probably is low glycemic despite the fruit. There isn’t a ton of fruit.
Pasta with marinara and garden vegetables. *This was a plastic-free dish.* This might be high glycemic; I bought whatever pasta was zero waste and it didn’t have a nutritional label.
