Apples ripen in the late summer/fall (depending on the type of apple and where it's being grown). "Good" apples (unbruised, bug-free) can keep a long time as is if stored properly in a cool, dry place.
Lots of insecticide, maybe some possibly carcinogenic polish to make them shiny, not so much hormones (so far as I know).
Have you ever tried stamen winesaps? They're my favorite kind of apple.
