So it was my friend Janet's birthday, and I baked a cake. I want to write this down because OMFG!! it was good.

I made some modifications from the Hershey's 'perfectly chocolate' chocolate cake, and made a cherry chocolate cake, with cherry cream cheese filling. Both Janet and I agreed, it was sinfully delicious.


Cake
2 Cups sugar
1 3/4 cups all-purpose flour
3/4 cups Hershey's unsweetened cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1/4 cup chopped maraschino cherries (to taste)
2 teaspoons marschino cherry juice

Heat oven to 350F. Grease and flour two 9-in round baking pans. Combine dry ingredients in a large bowl. Add eggs, milk, oil, and vanilla. Beat on med. speed for 2 mins. Stir in boiling water (batter will be thin). In a blender or food processor, chop the cherries with the juice. Add to the cake mixture. Pour into pans.

Bake for 30-35 mins, or until wooden pick inserted in the center comes out clean. Cool for 10 mins, remove from pans to wire racks. Cool completely. Fill with cherry cream cheese filling, and frost with 'perfectly chocolate' chocolate frosting.

Cherry cream cheese filling
1 cup powdered sugar
1/2 teaspoon vanilla
4 tablespoons butter
8 oz cream cheese
2-3 teaspoons cherry flavoring (to taste)

Mix all ingredients until smooth.

'Perfectly Chocolate' chocolate frosting
1 stick (1/2 c.) butter
2/3 cups Hershey's unsweetened cocoa
3 cups powdered sugar
1/3 cups milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating on med. speed to spreading consistency. Add more milk, if needed. Stir in vanilla.
