Fear and self loathing

In less than 48 hours Cafe 56 will open with me as it's pastry chef, part of a team of just three people, one of which is an 18 year old girl working her first job. i am pretty sure Cafe 56 is going to rock!

But whatever happens, keep in mind that you are giving your best. Your heart is in everything you do and you have a wonderful heart.

Freaking out is normal. Just don't let it spoil this great moment in your life.

i wish i could be there and give you a big hug, because that's what i'd like to do now.

Thank you kind sir, you so often offer me kind words and support. Perhaps you are my fairy godfather from afar.

I survived the opening, there were bumps and bruises and mistakes but I think it went as well as can be expected.

Well, I am not sure if I rocked, but I did manage to hold my own, loose 10 pounds and gain an inch around my biceps... this kitchen thing might be better than a gym... If this keeps up a year from now I am going to be the most fabulous muscle bear pastry chef around.

You know you can do this. It'll be hard work, you may have to pick up some of those missing skills, but in the end, you can do it.

It was and continues to be hard. I am relearning or remembering things I had forgotten and at moments I achieve something close to competence. I think I will keep going.

fail in what way? If you know your product is good it should sell. If you question it, improve it. I think we all know good from bad, never send out bad and fail is not an option.

Before a big event I was planning started and I was anticipating all things that could go wrong/weren't ready/etc., my boss told me what her mother told her before her wedding, "One thing will go wrong. Once you've identified it and dealt with it, you move on and anything that goes wrong after that will be easy because you already had that One Thing go wrong." Cafe 56 is a big challenge with big potential. You know your skills and what you are capable of. The bumps are inevitable, but you can handle them...you have before.

Oh we all had "One thing" go wrong. A couple of times, but we pulled together, and kept working.
