Congratulations! Now you just need to make MOAR! I hear from Best Buy that my vacuum sealer finally shipped so soon I will not have to fuss with waxing my cheeses. Hoorah. Waxed cheeses look great, but waxing a 3 lb cheese usually results in mess and tears for me. just being able to vacuum bag will be SO much easier.

Ok - you are so smart! That is a very good idea

And likely way easier

Does it change anything about the aging process? I assume less air gets in and that might slow maturation?
(ie: wax, I assume, isn't 100% air tight)

When you apply the wax as thickly as you did, it is effectively air tight. (Not enough oxygen/CO2 will be exchanged for mold to grow - which is the general idea here ( ... )
