Criollo chocolate is REALLY interesting. I've had it in ice cream--the fairly-easy-to-come-by Amazon Valley Chocolate that Hagen Dazs makes. It tastes like there are nuts and coffee in it, but there aren't!
That should lead into my comment about carob chips fairly well. My mom thought I was allergic to chocolate for the first 8 or so years of my life (she was wrong) and made all sorts of hippie carob snacks for me. Maybe I hated them because they weren't the real thing? Who knows. Either way, blech.
