They sound delish! I bought a big bag of sweet potatoes to try your granny apple/yam bake...and now I can do this too. Whee!

Woo!
Sweet potatoes are so sadly underappreciated. What irks me:
1. Some people only know them in terms of that hideous concoction of puree topped with marshmallows.
2. Their misnomer, "yam".
Oh, but I tell you, they are divinity in tuber-form.

I just like the sound of the word yam, so I use it incorrectly.
Like the buffalo/bison thing: there are no American buffalo. There are no American yams.
When I'm up to cooking again, great things will happen. We started making Creole fried chicken last night before my stomach freaked out.

I'm intrigued! I love all things Creole (except maybe overcooked greens) though I've never been a huge fan of fried chicken.
Post photos or send me a drumstick or something! ;)
