I had been informed that roots out of garlic (as opposed to buds) meant that it was grown in America, as Chinese garlic-growers cut theirs off.

I don't know - every time I've bought garlic that had green cores or roots, it's been clearly old, definitely not fresh.

Maybe my terminology is off, because the "roots" I'm talking about are the ones that will grow out of potatoes and garlic if left too long in the cupboard.

I think that's it. :)
