My mother seems to have figured out that one of the benefits of having me in the house is that she can text me recipes and send me to the grocery store to get ingredients and I'll make them.

She hasn't really experimented with recipes recently because she's just one lady. Earlier this week she sent me a link to a Tasty food channel recipe for French Toast four ways https://youtu.be/jlEzwi-aRmA So we tried the strawberry cheesecake version. It was ok, but I found it kind of tart. I'd really like to try the s'mores version sometime, though.

Then tonight she decided she's like a cucumber 🥒 & 🍅 salad, so she sent me another recipe https://www.budgetbytes.com/2015/08/simple-tomato-cucumber-salad/ and said she wanted to add feta as well. So I brought the stuff home. She assembled it and didn't slice the pieces very thin, but it was still tasty. We used lemon juice instead of red wine vinegar. Next time I think I would slice the onions ahead and marinate them in the dressing, and and put the whole cucumber and tomato into the fridge, then just before serving I would slice the cold tomatoes and cucumber into a salad bowl and pour the onion dressing marinade over it all and then toss.

I like cooking, but I'm sad that I'm still doing all of it. Before we moved, I asked my husband if he'd be willing to take over cooking full time so I could go on a diet because it's easier to stick to a diet if I'm not responsible for making all the not-diet food, too. He agreed, but after we got here he refused. I'm not sure if he'll come around to being ok with the idea again once we're more settled in. I just really want to focus on getting healthier.

I missed a medical appointment today, but luckily the office called to let me know I had missed it and rescheduled me to next Monday. I'm really grateful I won't have to wait a long time.
