A couple of days ago, in her own journal, emmarytz requested that I post this recipe for an apricot tart, and I thought that I could actually use the opportunity to make myself write in my own journal and put the recipe here

Aside from that tricky sliding off the parchment (during which I suspect my elegant tart will turn into a jumbled cobbler), this looks within my abilities. But with a cup of butter in the crust, "healthy" might be a stretch... -em

butter is the fat that lets your pancreas deal with all the sugar. or so a diabetic friend tells me :)
