I don't see why you couldn't use either flax seed or chia seed as a binder in that; both would add a tiny bit of crunch but it sounds like there's already a lot of textures. Or there's the Ener-G egg replacer, but it's potato based so if you have any nightshade allergies to worry about it's a bad choice, although it works BEAUTIFULLY.
(Chia is probably the more allergy-friendly of the two seeds. I know multiple people with flax allergies, it seems to overlap with treenut allergies sometimes.)
I wonder if you could add a little less water to the sweet potato mixture and just skip the eggs, rather than needing a binder at all. Mashed root vegetables hold their shape pretty well IME, but perhaps the fully pureed texture requires more liquid.
