Applied Cryptography by Bruce Schneier.

Applied Cryptography, as above. That tends to be the standard tome that everyone refers people to.

Also worth a look is "The Code Book" by Simon Singh (if you go to his website you may be able to get an electronic copy that has some extras).

Also look at Practical Cryptography, also by Bruce Schneier, which goes into more details than his first book. They complement each other, but "practical" is newer and I think it's easier to read.
