As for picky friends, when I eat out with people like that I politely explain to my friends why it's not the server's fault, although most of my friends have been servers and know better.

I had someone write a 2-page letter (typed) about me years ago. I was brand new there. It was Mother's Day. It was a shit show. They were merciless and acted as if I had ruined their vacation. The thing is, you can flip it around: if something as little as a waitress getting their order wrong or recommending a wine they didn't like creates that much drama in their lives, they are just deeply unhappy. It's sad. You should pity them.
