If you're good with your data, you should be okay without it. IMO Ultimate is for those who want all the bells and whistles on their 'killer gaming rig' to make their 'e-p33n' look huge. (Believe me, I'm not slamming any 'good geeks' when I say this, you'll know the types of people I'm talking about.)

I have Home Premium running on my 8 month old desktop, that version's features gets me by on what I use my computer for.

I guess it really depends on what you feel. I'm sure Pro would work fine in a school environment with having to log onto school networks and the like.

Let's see. AES works well enough as an encryption standard. However; somehow I doubt you'd have much use for a disk encryption scheme. If the disk contains data you don't want other people to have it may be an useful option. However; decrypting AES is not free; so unless you expect people stealing your physical PC for the data; it may be better turned off; as you'll have the cycles free for other usage.
