Potato Leek Soup to die for (not litterally, I hope) sweet_kitsune October 8 2006, 21:22:39 UTC
Ingredients:
-ten cups of potatoes (when peeled and cubed)
-3-1/2 teaspoon salt
-1/4 teaspoon pepper (optional)
-leeks (3 small, 2 medium, or 1 whopping large one)
-1/4 cup vegetable oil
-1/4 cup flour
-4 cups chicken broth (1 package of Campbells broth, I think it's 900 mL, is the right amount)
-2 cups milk
-1 large chunk of real butter (extra flavour, and to thicken it up)

Instructions
-Peel and cube the potatoes until you have ten cups full. Boil them with 2 teaspoons of salt.
-Saute leeks (minced) in 1/4 cup of oil. Add 1/4 cup of flour to make a smooth paste. Add 1 cup of cold water to the paste, stirring constantly.
-Drain the potatoes. Mash the potatoes to the consistency of your choosing
-Add 4 cups of chicken broth, 2 cups of milk, 1.5 teaspoons of salt, 1/4 teaspoons of pepper (optional), butter, and the leek paste.
-Cook and stir on low for 15 minutes.
-Serve plain or with cheese and Ritz crackers. add crumbled bacon for extra yumminess. Makes a big-ass pot-full 8p
