Today I wanted to experiment with cooking. I didn't want fish or any other meat. So, I went for tofu. I've wanted to try cooking with it for a while now, I just never got around to it.



I'm not a good cook to start with. I get these grand ideas but either never get around to trying them (fear & laziness) or fail terribly. Today was in the middle.

It all began with my notion to sauté onions and chopped tomatoes with brown rice. I've not really sautéed before, so I decided that when one sautés they use extreme heat. Here's what happened:




So, I don't think that's how it goes.

I started over. It went better the second time around. I added less EV olive oil this time too. I let the onions & toms sauté a bit then I added the rice. Aside from a pinch of salt, that was all the flavoring the rice got.

Next I got started on the tofu. I bought firm tofu, recalling something H said a while back. It was damned hard getting it out of the package and it made a juicy mess, but no biggie. I cut it up into bite size pieces, placed it into my skillet and added korma-like sauce and parsley. Why parsley? Because I had it and I figured I should add something else.:)

Tofu is easy, I just had to warm it up and add flavor. Yea! Athena better get used to it. Once again she sat at the table FOREVER finishing dinner. I caught her squishing it up and spitting it into her paper towel. She's getting sneakier. Arg.

Anyway, I thought it was a nice dinner. We always have a salad too. Tonight we had a spinach salad, with my favorite dressing, honey dijon. But not just any honey dijon! I can only find this particular dressing in a salad package, called Mediterranean "Something." It comes with croutons (which I never eat) and cubes of parm cheese, along with a packet of dressing. They don't manufacture this dressing in a large bottle, or so I searched unsuccessfully. But, I love it so much.:( I have about 5 "honey dijon" bottles in my fridge right now, stuff I tried but didn't like. Waste of moo-lah.

The tofu tasted good, thanks to the sauce, but my rice was so bland. What else could I have added?

I would makes these things together again, but I would need the rice to be spiced up somehow. Here's the final dish:
