GFCF soup, and birthday pie

as most of you know, darthfrog (heavily abetted by bomand and wolfmand) has become A Major Foodie over the last year or two. I'm mostly delighted by this turn of events, except when he gets on his "I'm going to teach you to like spicy food" kicks. As you've probably deduced, I'm taking a bit of a break right now - and it just became a longer break 'cause after I catch up on email and journal entries, I'm going upstairs to get me some FOOD!

I'm also wishing you had easy access to Rainbow Market there, because they have every last mushroom you've listed - and then some - FRESH, not dehydrated. I'm going to keep an eye out for Rainbow-equivalent markets up there in Hillsboro/Beaverton and the surrounds, because I definitely want to make a pot'o'that soup!

Finding a duplicate of Rainbow Market will be tough, because they are pretty damn good as such things go, especially for an independent and not a chain. But given how nutty-crunchy OR is overall, there HAVE to be fairly reasonable facsimilies thereof somewhere within hailing distance. Normally when I visit a place, they're among the first things I scout for - unless my hosts also have food allergies and know where they are. This reminds me, I never did post the review of Lingonberries Market in The Other Vancouver ;)

Hey Wolf! You'll enjoy this soup, it's very tasty. And it's definitely worth your while to make home-made chicken stock for this recipe. Our brand new 17 cubic foot upright freezer is rapidly become full of lots of stock - I'm experimenting with veal stock. Stock is a stock item ( ... )

a vegan Geri cream of mushroom soup: I'd use more dried mushrooms than fresh and hydrate them with an extra 2.5 cups of water

Or 2.5 cups of your favourite vegan stock ;)

when I come back, I have so many geri friendly food presents. the major supermarkets here (tescos and dunnes) have two or three aisles filled with gluten free stuff, and every food is required to warn not only about nuts, but also eggs, seafood, gluten and a couple others. My personal favorite are gluten free garlic and herb stock cubes that I think taste better than any stock I've tried to make from scratch, but there's also a load of desserts, flour alternatives, dairy-less chocolate etc. I think you'd have a ball food shopping over here. Apparently there are a lot of Celiacs round these parts.

the medical profession used to be of the opinion that if you weren't of Irish descent, you *couldn't* get celiac and thus people of other ethnicities suffered needlessly for years :(. Fortunately, that myth is out the airlock now :) Yeah, I wish we could get EU-calibre labeling over here in N. America, but the agribusiness people whine too much about their proprietary trade secrets :P

Please thank Dave's mom for those biscuits you sent with Den on my behalf. Unfortunately, they're FULL of dairy :(. I was going to send them to my sister, but they "may contain traces of nuts" :(. I'm going to get in touch with some of my other GF friends (and their friends) and find a *GOOD* home for them, because they look quite yummy :)

i was thinking of you :) however, i noted as i was flattening the cans for recycling that the coconut milk has ... somethingorother bisulphide in it as a preservative :( No idea if there is such a thing as preservative-free canned coconut milk - cynderella328 will probably know, or know who does, or where to find out. She has plenty of that kind of Clever :) (and other kinds too, of course, but that's the one that's most relevant at the moment :) )

It used to be hard to find coconut milk without preservatives. There was like one brand. And nothing organic. But now there are tons. Natural Value, Trader Joe's, Native Forest (think that's right) and a bunch more. Lots of organic ones too.

I'm allergic to most preservatives so don't touch them (ironically, sulfites are the one I do tolerate).
