Carnitas!

You may have heard that Christina and I bought a 4H pig, had it butchered an now have a freezer full of tasty pork.  Yesterday I used the 2 shoulder roasts from my share to make carnitas.  I can honestly say that it came out about as good as Juanitas (a hole-in-the-wall taqueria in Encinitas that makes what i consider to be the reference standard
