The drinking contest was intended to get Methos laid, not dead.
Joe had introduced him to sons of an old war buddy. Methos only wanted to see if the oldest meant what his eyes and grins implied. And drinking was just an excuse to get drunk and have sloppy meaningless fun sex in a back room. Everyone knew this. You weren't supposed to care who actually won.
Except ... well.
Methos was going to be damned if some 20 something punk was going to get away with drinking more than him. This "Dean Winchester" needed to be taught a lesson. And if they both ended up too drunk for more than hand jobs, well, there was always tomorrow night.
Three hours later, when Methos hits the floor, he realizes he hasn't died from alcohol poisoning in centuries. He could possibly be excused from forgetting the sensation. At least he's at Joe's, so the cover up will be easy. There will be no reason to hide from Dean and his beautiful body.
Two days later, it happens again. As he feels the Quickening bringing him back, Methos realizes with a shock that he might be in love.
