recipe suggestions?

I need to make a few dairy-based meals I can prepare ahead of time and eat cold on Sunday and Monday during the holiday of Shavuot.  Anyone have any good recipes?  None of my usual ones are sounding too appealing right now.  Might do a pasta salad of some sort, I suppose, and maybe a gazpacho if I find a good recipe, but I'd love more ideas!  (Fish ( Read more... )

I have a cold sesame noodle recipe, if you want it - we usually make them with tofu and veggies.

Maybe shrimp summer rolls? Or this kind of sandwich?

Here it is - it's E's mom's recipe. I usually throw in baked tofu cubes, and either mix in some cold stir-fried veggies or serve them on the side.

1 lb. whole wheat spaghetti (thin or normal)

7 T sesame oil
7 T soy sauce
3-4 T sugar
3 T balsamic vinegar
red pepper flakes

3-6 scallions, chopped
1 bunch cilantro, chopped

Cook noodles
Mix sauce, stir sauce, scallions, and cilantro into noodles
Chill

Nom. I add carrot and red bell pepper to noodles with a similar dressing.

I'm a giant fan of cucumber, dill & yogurt. It's not a full meal, but if you mix it up early the flavors get really strong and yummy. Use lots of fresh dill.
