My gift to everyone for this new year is the menu for last night's dinner. It's the first proper dinner I've done in so very long I thought I was incapable! I was not only capable, I even cleaned the bathroom!! It was a light meal, because most of us were coming from Conflux and I noticed how heavy the food was in the vicinity of the hotel. That sounds like the best possible start for the New Year!

Tell me more about the challah with apple through it, please: did you just chop the apple in, or did you do something to it first?

I just chopped the apple in this time. Last time I made it as a stuffing in the different parts of the weave, but I ran out of time, so I just made a round loaf with apple in it. Maybe I'll do a proper round plait tomorrow, with apple and sultanas. We'll see.

The apple worked out particularly good just kneaded into the dough. I didn't make the dough too sweet and I added a touch of cinnamon.

It really was. I've got my joy in coking back. It makes such a difference to my emotional well-being. Now all I need is loads of people to eat my cooking!

Thank you - and may yours be, too. I thought of you when I was cooking, actually. It wouldn't take too much adaptation to make this menu work for you.

I've only made challah once and it took me an entire day, what with all the various risings and punching downs and more risings. I take my hat off to anyone who can do it, let alone a variation. Your meal sounds wonderful, though I admit I would skip the soup - the chilli would put me off. I like the idea of chareef, I just can't handle it. Weird that I love Indian food!

I used very little chili - just a touch.

And I love making bread. It's one of those things that makes me happy. I really missed it! And yes, I'm making a different seasonal challah tomorrow.
