2 cups lentils
1 cup brown rice
1 onion (chopped)
3 carrots (chopped into biggish pieces)
1 celery rib (chopped)
1 28oz can of tomatoes (or fresh - I really don't like peeling tomatoes)
3 garlic cloves (peeled and left whole)
handful of flat parsley (chopped)
slightly less than a handful of cilantro (chopped)
thyme (dried or fresh... about a tsp)
bay leaf
salt
pepper
Toss everything in big pot, add about erm, 7? 8? cups water (or broth) and simmer until everything is soft (an hour or two) (stir it every once in a while)
It is kinda super thick, it can be watered down at the end.
