little bit of lamb erm, I don't actually know what the cut is, when I make this for myself, I'll go to the store and pick out the smallest, cheapest cut of lamb they have. It is all about the flavor and not a big chunk of meat. Only if I was making this for guests, would I get more meat. I suppose it could be made with beef too, and following the same principle. Also, I guess one could omit the meat entirely. XD
2-3 cups Chickpeas (canned would be easiest, dried works too) (cooked)
3 onions (chopped)
8 tomatoes (peeled, chopped) again, when I make this, I'll probably just use canned)
a preserved lemon peel (chopped)
10-12 big krollip leaves (chopped-ish) I've never seen krollup here, but it is a chard relative, which is easy to find
handful of flat parsley (chopped)
slightly less than a handful of cilantro (chopped)
cumin (spoonful??)
cinnamon (smallish spoonful??)
salt
pepper
ginger (just a pinch)
In big pot, cook the bloody hell out of the onions and olive oil(15 minutes?)
Toss in everything else and a bit of water and simmer for an hour (stir/add water if needed)
There should be some liquid left at the end 'cause if there's no liquid to soak into your couscous, it is sad XD
